Bacon Gruyère Egg Bites Recipe

These are some of my favourite snacks to keep in the fridge. They’re super quick and easy to make and they are great on-the-go nutrition.

  • 8 eggs
  • 1/2 cup of milk
  • 1/3 cup chopped bacon, chopped turkey bacon or bacon bits if you’re making it simple
  • 1/2 cup of shredded gruyere or cheese of your choice
  • Optional: mushrooms, peppers, red pepper flakes, spinach or anything else you want to throw in

Mix eggs and milk with an immersion blender or regular blender. Pour into a bowl. Add the other ingredients.

Grease muffin tin(s) and pour the egg mixture in.

Bake at 350 for 20-25 minutes or until the egg is set. Pop them out when cooled, put them in a Ziploc bag or Tupperware and store in the fridge for up to 5 days.
